Day three sun-drying cacao on banana leaves (video & transcript)

This is day three of drying the cacao beans under the sun. Wow, the banana leaves are quite brown at this point. I think it’s a good time to change them out. Yep, it’s time for a fresh banana leaf.

Now, let’s transfer the cacao beans onto this new banana leaf that I’ve got. I’ll just hold it down with these weights. The color of the beans is starting to come along quite nicely. Okay, now let’s spread them out evenly.

Let’s check out how it smells. Wow, the aroma of the fermentation and the cacao beans is becoming very pronounced. It smells quite good!
