After seven days of fermentation, this is how the cacao in the coir looks. There's a layer of foam on top. Now it's time to dig the cacao beans out of the coir. Let's remove the banana leaves first. The cacao beans are nestled in there. Whoa, the smell of fermentation is very, very strong.
Okay, let's pour them out onto the banana leaves now. With a little effort, the cacao beans are out of the coir. Let's spread them evenly under the sun for drying. And that's it for now. We'll wait while they dry under the sun over the next few days.
