Santos's Roasting Step — Paulo's Farm Beans into the Roaster

Today we pay a visit to the facility that creates these beautiful blocks of ceremonial cacao from the Amazonian rainforest. Santos, who runs the facility, will be our guide. Here come the beans from Paulo's farm.

The very first step is to bring the beans into the roaster and roast them for 25 minutes at 125°C.

After roasting, the beans are allowed to cool down to around 55°C. Here they come — look at all the beans. Santos pours them out for inspection before the next stage. They seem pretty well done at this point.
