Santos's Winnowing & Cracking — From Roasted Beans to Cacao Nibs

Published: April 30, 2026 By Agroverse Field Team

Transcript

The next step, after roasting the beans, is to separate the nibs and the husks using the winnowing and cracking machine.

Roasted beans are fed into the machine. The cacao husks come off one side, and the cacao nibs — the heart of what becomes chocolate — come off the other.

This is the stage that turns whole roasted cacao into the ingredient that goes into liquor, finished bars, and Agroverse's 8-oz cacao nib pouches.

Filmed on-site at Santos's Itabuna facility — Agroverse's origin processing partner where farmgate cacao gets its first shaping into nibs, liquor, and finished bars.
