This is how you turn cacao nibs into cacao liquor. If you kind of push it around for about five minutes, these nibs get ground down. How much is it? So, we’re using 200 grams of cacao nibs and 50 grams of monk fruit, along with 80% premium dark chocolate for the bar.

We have the hot boiling setup, and we’re using a double boiler to transition this from a solid state to a liquid state. It’s starting to melt as I’m stirring, and then this has to go into the freezer once it’s done.

So, this bar is complete, right? It’s about 100 grams, and I’m going to remove it from the mold. Zoom in a bit here. Ooh, shhh. The whole thing came out as a solid bar. Oh, look at that! It’s one whole solid bar. Perfect. And in it goes—bar number one.
